Paneer Roll



Paneer roll is an Indian street food, where paneer and salad mixture are rolled in regular chapati. The fillings can be made with large number of variants like paneer, potato, veg kebabs and many more. Today I am going to use paneer mixture which has paneer tossed with onions, tomato, bell peppers and few spices. It is fairly simple recipe and healthy too. Traditionally bread is made with all-purpose flour, but to make it healthy I am going to use whole wheat flour chapati. You can even use store bought tortillas. Serve this paneer roll with cabbage salad or yogurt dip.






Ingredients:

For chapati:

  • 1 cup whole wheat flour
  • Salt to taste
  • 1 teaspoon oil
  • Water to knead dough


For paneer mixture:

  • 1 cup paneer cubed in bite size
  • ½ onions
  • 1 tomato
  • ½ green bell pepper
  • 1 tablespoon oil
  • 1-2 finely chopped green chilies
  • 1 teaspoon finely chopped ginger
  • 2 teaspoon finely chopped garlic
  • 1 teaspoon tandoori masala
  • ½ teaspoon red chili powder
  • ¼ teaspoon turmeric powder
  • 1 teaspoon kasoori methi
  • Salt to taste
  • Few chopped mint leaves


For yogurt dip:

  • ½ cup yogurt
  • Few mint leaves finely chopped
  • Sal to taste
  • Red chili powder



Instructions:

  • For chapati; Combine salt and oil to wheat flour and knead a soft dough using water. Cover the dough and set aside.
  • For yogurt dip; mix chopped mint leaves, salt and red chili powder to yogurt and beat well. Set aside.
  • For paneer mixture; cut onion, tomato and green bell peppers into small cubes and set aside.
  • Heat the oil in pan. Add chopped ginger, garlic and green chili, sauté on medium heat for 30 sec.
  • Add cubed onions and sauté on high heat for 1 minute. Add cubed tomato and sauté until tender.
  • Toss in bell peppers, Cook on high for 1-2 minutes.  We still want to retain the crunch in veggies so always sauté on high heat.
  • Add paneer, tandoori masala, red chili powder, turmeric powder, kasoori methi and salt to taste. Mix well and cook for 1 minute.
  • Add chopped mint leaves.
  • Divide the dough into equal balls. Roll into thin chapati using dry flour and cook until you see light brown spots on both side. No need to add oil.
  • Take about 2-3 tablespoon of paneer mixture and place in the center of chapati. Layer the paneer mixture with sliced onions, dash of lemon juice, chaat masala and red chili powder.
  • Fold to form a roll. Fold just like burrito so that ends are completely sealed.
  • If you wish you can pan fry the roll using little oil until golden brown.
  • Serve hot with yogurt dip or salad.
