Methi Fritters (Methi Ni Vadi)



Methi fritters, made with methi leaves and it is super delicious. Best taste when methi are in season, do try out this recipe. Adding onion and tomato to methi leaves will descend the bitterness of methi leaves. It is my favorite. These are not deep fried instead pan fried which makes it healthy. I have very fond memories with this recipe as my mom use to make it for me and she calls this recipe as methi ni vadi. This vadi can be eaten with roti or place the vadi on roti top it with some mixed salad and form a roll or as simple you can use as burger Pattie.



Ingredients:

  • 1 ½ cup chopped methi leaves
  • ½ onion finely chopped
  • 1 medium tomato finely chopped
  • ½ tablespoon ginger-garlic-green chili paste
  • 1 teaspoon red chili powder
  • ½ teaspoon turmeric powder
  • 1 tablespoon coriander-cumin powder
  • ½ cup rice flour
  • 2-3 teaspoon gram flour
  • 1 teaspoon oil
  • Salt to taste
  • Couple of tablespoon oil to pan fry
  • Water if needed



Instructions:

  • Take a big bowl add chopped methi leaves and all masala mention above in ingredients. Mix well.
  • Add rice flour, gram flour, salt to taste and 1 teaspoon oil. Mix well with methi masala. Moisture from onion and tomato will help to form dough. Use water only if needed. Consistency should be like very soft dough.
  • Heat 1 tablespoon of oil in a wide pan. Take 1 ½ tablespoon of mixture directly into pan and with the back of the spoon form a Pattie of about ¼ “.
  • Cover and cook on medium heat until it is golden brown on one side.  Flip over and cook other side until golden brown in color.
  • Serve hot.
