Curly Kale Salad with walnuts


Kale is one of the most common greens used in salads. It is fibrous and has nutty flavor. Massaging the kale is very important or else it would be bit chewy.  It is packed with fibers and is good source of calcium. Any dressing can be used but one with thick consistency goes well. I am using avocado dressing, topped with some grapes, julienned beet root, toasted flax seeds and walnuts.



Ingredients:

  • 1-2 cups kale
  • ½ cup shredded red cabbage
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • ½ avocado
  • ½ teaspoon black pepper
  • Dash of salt
  • Beet root julienned
  • Walnuts and toasted flax seeds to garnish


Instructions:

  • Wash and dry kale leaves. Tear them apart roughly using your hands.
  • To make dressing mix olive oil, lemon juice, avocado, honey, salt and pepper. Grind it to smooth paste.
  • Add enough dressing to kale, lettuce and cabbage mixture and massage it real good.
  • Take out in a serving bowl or plate, top with beet root, flax seeds and walnuts.
