Salad Wrap




So easy to make, this wraps filled with leftover salad and roti (tortilla).  Kids usually don’t like salad; this is the great way to ensure that they eat their veggies.  Today I am going to prepare in Mexican style using mashed avocado and salsa. You can make in Mediterranean style using hummus and tahini as spread and dressing or simply use garlic chutney as spread and green chutney as salad dressing.  




Ingredients:

  • 2 whole wheat roti (whole wheat tortilla)                           
  • Any greens (spinach, lettuce or kale)
  • Chopped carrots
  • Chopped beet root
  • Chopped green apple
  • Chopped radish
  • Chopped onions
  • Broccoli chopped


For spread:                                                                     
  • 1 avocado
  • 1 teaspoon lemon juice
  • Salt to taste


For salad dressing:
  • 1 tablespoon chopped parsley
  • 2 teaspoon olive oil
  • 1 tsp lemon juice
  • 1 tsp honey
  • Salt to taste


For Salsa:                                                                                         
  • 2 tomatoes finely chopped
  • 2 tablespoon onion chopped
  • Coriander finely chopped
  • 2 garlic cloves chopped
  • 1 green chili (jalapeno) finely chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Cumin to taste


Instructions:

For spread:
  • Mash avocado. Add lemon juice and salt to taste and mix.


For Dressing:
  • Mix all the ingredients mention above. Until it all comes together.


For Salsa:
  • Mix all the ingredients mention above. Until it all comes together.


For Salad:
  • Mix all the veggies. Add dressing to your taste.
  • Warm up roti (tortilla). Spread generous layer of mashed avocado.
  • Add good portion of salad. Add prepared salsa over salad.
  • Wrap the roti tightly to form roll and serve.
