Black Bean Soup


Black bean soup is super easy to prepare and taste great, also known as vegetarian chili. Black bean soup is low in calories, packed with fiber and protein. This soup can be made with combination of pinto beans and kidney beans. Soup can be served over rice and dollop of sour cream.




Ingredients:

  • 1 can (15oz) of black beans
  • 1 tablespoon crushed garlic
  • 1 teaspoon ginger
  • 1 bay leaf
  • 1 teaspoon roasted cumin powder
  • 1 teaspoon red chili powder
  • 1 tablespoon oil
  • ½ cup vegetable broth
  • 1 tablespoon lemon juice
  • Few chopped coriander leaves
  • ¼ cup chopped carrots
  • ¼ cup chopped onions
  • ¼ cups chopped bell pepper
  • 3 stalks celery chopped
  • 1 tomato chopped
  • Salt to taste



Instruction:

  • Heat up oil in sauce pan over medium heat. Add bay leaf, ginger and garlic, sauté.
  • Add all the veggies, salt, cumin powder and red chili. Mix well, cover and cook until veggies are tender.
  • Add black beans and broth and cilantro. Mix well.
  • Cover and simmer for 20 minutes or until soup consistency is to your liking
  • Add lemon juice. Serve over plain rice or simply enjoy the soup.
